So I have a Yosemite that needs a new hard disk, we all know that Yosemites have UltraATA33 hard disk interface, this one is a revision B model, not bad IDE controller. The 'oldest' kind of new hard disk I can find are UDMA ATA100, I guess that is OK, just that the speed is going to be down to the ATA33 standard, right?

I thought it was ATA133 or am I thinking wrong on this one?

I've never had a problem with any ATA drive on my brother's B&W. As long as it is an IDE drive you sholuldn't have any issues.

Well, my PowerMac MDD is ATA100 so I find really hard that the Yosemite G3 is ATA133 Nevertheless as you say I hope that an IDE ATA100 works just fine.

ATA/133 isn't even a real standard. (The last parallel ATA standard is ATA/100.)

Regardless, the B&W is ATA/33.

Any drive up to 120GB will work.

Technically, you can use larger drives as well, but only the first 127 GB of them.

the HD bus on B&W's is ATA/33, but will take any modern ATA HD up to 127GB, it will just run at the slower speed....

Unless of course, you install a faster ATA controller card, like Sonnet's Tempo 66/100/133, the you can run any size/speed HD you wish, or get an SATA card and go that route.....
