I just got a mac mini & bought a third party 1 gig ram stick to put in there. Can I use the 512 chip that I'm removing in a 2004 eMac?

Yes, as long as the eMac takes DDR RAM (1 GHz and up USB 2.0) it'll be happy with the Mini's leftovers... :-)
