My G5 has 512 of ram in it (cheap bastads) and I would like to add at least 2gb more. However, should I match the 512 stick with another 512 stick and then add 2x1gb sticks after that??
I ask cause I 've heard that memory should be installed in matching pairs to get the best from it??
You don't have a choice but to drop in matching pairs. In other words you can't add a 256MB and 512MB because it won't work. You need to add two 512MB modules or two 1GB modules and etc.

if you're planing to add more memory in the future (you didn't say which PM G5 you have, some only have four RAM slots), I advise you to get two 1GB modules (instead of four 512), because you'll save two slots.
