No, not usefully.
You can do it with a video input/tv tuner Firewire device, but they usually add enough lag to make games unplayable.

I played XBox on my iMac last week. It worked great. I ran the XBox output into my DV camcorder's analog inputs and then hooked that up via Firewire. Then I found a program that would display that in full-screen. It's a little fuzzy, but I didn't notice much (if any) lag.
I don't remember the name of the app I used, when I get home, I'll pull it up and post it here.
If you don't have a DV camcorder, and you have $150, you could get the new eyeTV EZ, they claim that you can play XBox through it. Plus that is a TV tuner, which would make your Mac work as a regular TV!

Any of the devices that don't use built in hardware encoding will work. The old Eyetv Wonder USB or new Eyetv EZ for example. Since these devices use software and cpu based encoding there is no delay. The other option as the previous post pointed out would be using a DV camcorders inputs and using a program like Vidi to play full screen.
