I just purchased a refurbished demo G5 2.7DP at my local apple store this weekend. I opened it up when I got home and discovered that it had more than the stock amount of RAM (512MB), it actually had 2GB. Is this a mistake or pretty common?

Well its only a mistake if they told you it came with less than 2 gig of RAM. I would guess that because it was a demo machine, they put a fair amount of RAM in to give a better system speed in the shop to impress people more.

i don't think it's uncommon. I bought a refurb dual 2.7 and it had 1gb of ram. I believe someone else posted in another thread, who purchased a similar machine, that had a larger hard drive as well as extra ram.
I gotta have more cowbell.

Clearly a mistake. Take it back and ask to have the RAM removed. Don't let them give you any crap, either.
