I have connected my mini to a new LCD TV/monitor. The monitor will accept 1024x768 60Mhz resolution but every time the mini reboots, it resets to a default resolution that is not accepted by the monitor. Is there a way to set the Mini's default resolution to the wanted resolution? Is there a cable/connector solution that will fix the resolution going into the TV no matter what the Mini defaults to?

i had this problem too, i had to hook my mini up to a regular CRT monitor and change the resolution to 1024x768 so that it would work, dont know if this helps or not. also, try displayconfigX

Yes, that is what I did, too. However, on reboot, it resets to a different resolution the monitor does NOT recognize. I don't want to keep a monitor and TV in the room if it's avoidable.
What is "displayconfigX"? How do I access it?
