miniStack from Newer Technology - anyone got one and if so how noisy is it? Do the fans come on much during use?

They are pretty quiet. The most noise will be from the drive you put in it so choose wisely.

Thanks for the response, I was considering getting a pre-assembled one from OWC (which has a deal on them at the moment, hence my interest) but I'll have to look into the user experiences with the Hitachi drives they are using.

I got one and put a Seagate 120 in it. Every once in a while you can hear the HD spin up a bit, but overall I'd say it's pretty quiet. And as a bonus it's nice to have the extra ports.

Yup, that's the other reason I'm contemplating getting one, for use as a usb/firewire hub. I take it you haven't had any kernel panic issues with it being a USB hub?

Incidentally, do you use it to boot from or just as an external drive? If as a boot drive - again, what is the performance like?

No kernel panics yet. (knock wood) I'm just using it as external drive for storage and hosting files.
(I'm using 10.4 server on my mini) It's very quick to access files from the external. Not sluggish at all.
