Safari converts single byte backslash character '\' to double byte backslash character if the field contains other double byte characters (some japanese text).
Anyone has any idea why and how to stop this ?

no, the enconding is OK. if I change it to western english I won't be able to see the japanese characters, isn't it ? the encoding has to stay shift-jis.
if the field does not contain other japanese characters it will leave the single byte character \ untouched.
