New to Mac what should I get?

I have used PCs for 10-15 years. I am looking at the new G5 intel core due. I can't decide whether to get the 17" or the 20".
I was also wondering how easy it was to upgrade ram if I bought a 17" G5 on ebay and then just bought an upgrade of memory and HD space.
I am getting a mac for lots of photo storage occassional photo editing and lots of music space. Will 512 MB or ram and a 160 HD be enough for that?

Your terminology is a little bit off. The G5 is an older processor that Apple had been using in the iMac and PowerMac, before they transitioned the iMac to the Intel Core Duo.
The memory is about the only thing on the iMac that is designed to be user-upgradable. If you are concerned about internal storage, I would get the iMac with as much built-in hard drive space as you can. Upgrading memory yourself is easy.

You can never have too much memory or HD storage (or screen real estate, for that matter) when you're dealing with photos and music.
And as a current Windows user, it may be in your best interest to go with a new Intel iMac, which allows you to run Windows as well if you ever need to.
Adding memory to the iMac is a simple matter of unscrewing a small metal plate on the bottom edge and popping the new memory in. A couple of minutes is all it takes.
My vote for you? A 20" Intel iMac with the 250G HD and an extra 1G of RAM. I bought my 1G RAM module at NewEgg for under $100. Amazon is a good bet for the iMac.
I have the 20" Intel iMac (with the 250G HD) and it's a real dream machine. I also have a couple of external FireWire hard drives for backup and extra storage if I need it.

I have delt heavily with computers for 15 years but have never bought ram or extra hardware so I feel like I am going to screw something up but everyone has told me that is easy to install. I also heard that Apple techs over the phone can help me if needed is this true if I purchase extra hardware from an outside vendor such as newegg instead of directly from the Apple store?

I would get a 20 inch and try to get a refurbished from apple. I always get my memory from Crucial, but many places sell good memory. I got my first computer in 2003 and have added my own memory to each computer since, iBooks, iMacs, G5 powermac. You'll be able to do it just by following pics.
