Hi,
The Mac mini has 4 USB 2.0 ports and 1 Firewire port. Many Firewire external drives have two firewire ports and you can connect you camera to the drive, then the drive to mini (loop-thru). You can easily ingest to the external drive this way as the data rate for DV gets nowhere near FW 400 saturation/maximum.
Some external drives which are designed to match the mini have firewire hubs built in as well which is another option.

There is a solution that essentially lets you plug to monitors (VGA) into a box, and plug that box into the mini. Then it basically 'fools' the mini into thinking its got, for eg, a 2880x900 monitor (if each monitor is 1440x900). Sorry I can't be more specific, but if you hunt for it around the web, I'm sure you'll find it.

Edit: After a bit of searching I found it. Its quite pricey, at $169. Anyway, heres the link to the manufactuers site: DualHead2Go

And here a page I found with someone using this setup on a mini
