I've read on another forum that Intel is supposed to be coming out with a quad core processor sometime in November to replace the current dual core Conroe processor. Does anyone know if this is true and if it is will there be a similar update for the Xeon processor Apple uses in the MacPro?

Yes that is true and yes there will be a Xeon variant (currently codenamed Clovertown). The quad-in-a-socket chips will probably be clocked lower than the dual-core chips and they will be priced pretty high. But an 8 core Mac Pro is a possibility for Christmas. I'm not entirely convinced that Apple will adopt the quads this year; I think they'll wait until they come down in price sometime next year.
