Hi,
I'm sure others have complained about this but there is nothing in the headless Apple lineup between the mini and the MacPro. I don't need the quad beast with its FB RAM and it's just too expensive. I have money burning my pocket for a Conroe headless Mac for $1800 or less (essentially, an iMac without the LCD, they'd still make a killing at that price). iMac is out of question since I have a 30'' ACD and would likely order x1900 video. Are they going to come to reason and either drop these prices (unlikely, those Xeons are expensive) or just release a lower end machine? There was always a cheaper G5 in the lineup and now there's nothing...

Lots of threads on this one. Search for "xMac" or headless Mac. John Siracusa over at Ars has written a bunch of articles/journal entries on this, and there's a long "xMac" thread over at the Ars forums as well. You're not alone.
As for your last question, my guess is no. Apple seems to like their simplified product line-up and likely won't change it soon.

I'm in the same boat really. So like TimmyDee51 said, you're not alone. I need a mid-range Mac capable of running dual monitors and sporting multiple internal drives. I don't need a $2500 computer, not when I can get what I need on the PC side for about $500. And I've encountered plenty of people with the same needs as me so it's not an entirely unique market segment.
Regardless, I really don't think we'll be seeing such a system any time soon. Apple seems focused on building all-in-ones (which I personally don't like) or high end workstations. So my plan at this point is to hold out for another year or two, if possible, and pick up a used Mac Pro for $1000. That's not what I'd like to do but there's not many options.
I tried switching to Windows, tried really hard, but it didn't take. After two months I came crawling back to my old G5. Thankfully I never got around to eBaying it.

I don't know why people keep saying this. We have no idea what they are planning or willing to do.
Anyone see the Cube coming? Or the iPod? Or the Mac Mini? Or the Intel transition?
Were they supposed to release a NEW design in the middle of a hardware transition? They didn't even redesign their current lineup with the chip change as per their usual style.
The Mac Pro is huge and APPLE calls it a workstation. This leaves not only a hole, but a hole they DIDN'T have before. They have had an expandable tower/desktop of reasonable proportions since before I was a Mac head. Now they don't. They may very well fill it with something new, especially with the way they seem to be trying to appeal to more PC users than ever.
Yeah, I know. This has been discussed ad infinitum, but I just thought I would get my 2¢ in.
