I realize that I can use a software RAID 0,1,10 on the Mac Pros and still boot off them, however is there any hardware RAID (RAID 5 specifically) that is bootable? If so, how hard is it to re-route the SATA cables from the 4 drive bays in the Mac Pro to the card?

The Mac Pro does not use SATA cables. They're soldered onto the motherboard for a cable-less design. You simply place the drive into the provided carrier, and slide it into place.

Hardware RAIDs are bootable, the OS just sees a big harddrive and not the details of the RAID. You either have to get hardware RAID SATA card or a regular SATA card and an external RAID tower. Do a search to find out more about those two options.
I don't suffer from insanity, I enjoy every minute of it.
