Hey there

what are some Mac Pro tests that you can do to see the performance ?

Meaning:
Graphics
Processor etc..?

There is an app called Xbench, but I'm not so certain that it is that reproducible. You'd probably be better off testing raw performance in XP on BootCamp - things like 3Dmark and PCmark.
