iMac data junkies?

I'm looking to move to an iMac 20" from my current PC setup (see below for details). While I am a bit worried about the actual processing power (for video/photo editing) I'm much more worried about data storage. Currently I have twin Sata 300 GB drives and an external 250 GB drive. Both the internal drives are full and the external has about 30 GB of free space left. How do you data junkies/packrats solve your storage needs without detracting from the elegant simplicity that is the iMac? Thanks for any help

PC Setup
Intel P4 3.4GHZ
3 GB RAM
Dual Seagate SATA 300 GB
WD Firewire 250GB
NVIDIA GeForce 6600 GT
20" Radeon Pressview XL

If you want the firewire 800 one though I think you have to get the 24" iMac.

Well I use a firewire 800 enclosure similar to what ^ linked to that houses dual 320gb drives (non-RAIDed). All you need to connect such an enclosure to a 20inch iMac (or any firewire 400 equipped mac) is one of these cables: Link Depot 10 FT IEEE 1394B 6 PIN TO 9 PIN Cable - OEM at Newegg.com which allows you to go through the firewire 400 port. This setup works well for me, and I think it would allow you to retain your data-storage habits. Google up "firewire 800 enclosure" and make sure you find one that allows multiple drives and preferably daisy-chaining (so you can hook up another enclosure to the first one if your needs grow).
