Will I have all the software and applications that are already preloaded on the iMac on the discs that come with it? I just didn't want to delete any applications and later find I have no way of getting them back!

As I am a soon to be switcher am I completely wrong - does the iMac even come preloaded?

Yes, the iMac comes preloaded with everything that's on the provided install discs.
