I have a dual 867Ghz and a dual 1.25Ghz (FW800) PowerMac. Is there any way to add SATA connectivity to these boxes?

Just add a SATA controller card. EZ....I have a Seritek in my G5.

I've got a PCI SATA card in my Quicksilver. works great. I think it's this one.
