xserve raid setup questions

If i bought an xserve with 3x 750Gb HDDs, and raided them so they were all mirroring each other.
Then I partioned the HDD so it was 50Gb Boot and 700Gb Data.
Could i take one of the 3 hard disks out of the xserve and use it as an 'offsite backup' (eg if server is stolen we can use that hdd to boot and get running again.
and then when i brough the offsite backup in, OS X would auto update the hard disk so it was upto date.
Is that correct?

Would the RAID function properly with one of its disks missing?

Don't do that. This is not a backup, so if you want to have a drive for backup purposes, then do it properly: set up a RAID0 for two drives and leave the last one as it is. Use your favorite backup software to do incremental backups on the data you want saved.

wouldnt a RAID0 increase the chance of me losing my data?
What if i RAID1 two of the 750Gb HDDs and used the other one as an incremental backup drive?
That way all eventualities are covered
we don't have time to stop for gas

oh, and is there a way to backup data as and when its written to a hard disk? like an as-it-happens-backup-app?

There are a million reasons not to do what you're suggesting.

Use CarbonCopyCloner (or dd if you're leet like that) and an external Firewire disk to duplicate the 50GB boot (OS/apps/configuration) partition. Then take that offsite and use it should you need to recover on new hardware along with your tape data backup or whatever.
