I've got a Prima 27" LCD TV and I've been thinking about getting a mini to hook up to it. I'd be using it for both movies as well as internet surfing, and maybe the odd WoW game. I don't really know much about using an HDTV as a monitor, but have had fairly poor results hooking it up to my iMac (pre-iSight model, and admittedly it was through s-video) Text was borderline illegible, and movie quality was easily below that of my DVD player.

Basically I just want to know if it'll be usable as a computer (ie. for internet, email, etc) Otherwise I might just go with a 24" iMac and get EyeTV or something.

My only recommendation is get 2G right off. The post purchase upgrade options - which you would want to do - are very expensive.

One of the first things I always do is max out the RAM. My main concern is the quality of the video I'd get out of the TV.

What makes for a good video output on an HTDV?

Testing on s-video is not a good indication of how DVI/HDMI (same thing, different plug) will look. Slap a DVI-HDMI adapter ($3) on the mini and it will look just like any other monitor.
