If you have the cable, you just connect it like a monitor. From there how well it works will depend a lot more on the particular TV than on your computer -- for some TVs it works just like any monitor, for others they don't correctly report what they are capable of and you'll need a utility like SwitchRes X to force the correct settings (or you'll get something low res and blurry, or nothing at all). Also, some models won't do 1:1 pixel mapping, they expand the picture (to hide noise on the edge of HDTV broadcasts) which can force your menu and dock out of the field of view.

My best advice is to look at avsforums for the particular HDTV you're interested in. There's also a thread over there somewhere with a list of HDTVs that do 1:1 pixel mapping.

Overscan does vary by the particular TV when you use the HDMI connection. So I just used the VGA connection. Despite a lot of myth, there's really nothing inherently wrong (it can get degraded somewhat depending on the cable run, it's analog and susceptible to interference along the cable) with a VGA connection... and you KNOW it's 1:1 pixel mapped.
