To rename, click on it once, then click on the name, it will become highlighted, and you can rename it.

To view pictures in preview, open the folder they are in, go to the view menu, and click 'as icon'.
But, to be honest, you should consider importing all your photos to iPhoto - it is a much better photo manager than the Finder.

After switching to Icon view, you may have to do the following:
View > Show View Options. Check the 'Show icon preview' checkbox. You can also use the slider to make the icon preview larger.

To rename a file, simply click on the file once and hit the return button on the keyboard.

A few more alternatives - use the column view which presents a preview of all files in the rightmost column. if the files are images, then the image will be shown as the preview.

Alternatively select the images (command-A to select all) and choose Slideshow from the contextual menu or the action menu (the one with the gear on it) in the Finder toolbar.

See here for a screencast (~3.1MB) of how to do the slideshow.

Notes on the screencast;

1. Apologies for the small size of the area captured, but it keeps the file size down while maintaining highest quality
2. My Finder view is set to Column view initially, I select some image files and open a slideshow... demo that for a bit, stop it and then switch to Icon view (with icon previews activated). You will notice that I have colour labelled the files, which is more obvious in the column view. In Column view, the sort order is always alphanumeric, but in icon view, I have it set to display by date created, hence the difference between the images on view.

I'd love it more if it didn't have an arbitrary limit on how many images it will show (approx 137, fwiw), which makes it useless for folders with several hundred image files in them. One thing I hope they improve on drastically in Leopard.
