You can add Bluetooth by buying a regular Bluetooth stick (e. g. by D-Link). Most of them contain the same chipset and are thus all supported by OS X. You don't need to do anything but insert it into a free USB port.

What about the 802.11N WiFi?

There is a good deal on a refurbished Mac Pro right now, but it lacks those two things.

I guess it doesn't matter, I figured out how to get an even better deal on a new one with a student discount, some after-market ram and HDD, and a refurbished cinema display.

You can buy the internal Wifi/BT cards for the Mac Pro from a variety of places... a lot of people want them to upgrade their Core Duo macs to 802.11n.

Santa Rosa is a "platform" which needs three things- Intel chipset (called Crestline), Intel graphics and Intel WiFi. The MBP only uses one out of those three components- the chpiset. So its not really Santa Rosa.
