Couple of questions here.

How decent is the RAID 0 software solution on the PowerMac G5 in Tiger?

How would I transfer an OSX installation (apps, docs, etc) on a 160gb SATA drive to a RAID0 configuration on twin 320gb drives?

Can PC PCI Esata cards be used in a G5 Powermac?

Its not bad in terms of performance. It certainly sped up my old MDD G4 when I booted from a RAID pair. Don't have much experience regarding stability or reliability.
You can use Carbon Copy Cloner to copy an install from one volume to another, or disk utility to create an image of the install which you can restore to the new RAID volume. You'll need another boot disk to do either though.

You'll need a PCI card which is Mac compatible.
Try other world computing for plenty of choice at good prices.

Just picked up the G5 Jive and some drives + the SIIG Mac SATA card.

Probably not; it's likely physically/electrically compatible, but probably won't have OS X drivers.
