I am prompted for correct spelling in Safari and Text Edit etc, when spelling in UK English. The word "colour" being an obvious example. Can I set UK English as default? When I use MS Word it seems OK but not when using other Mac apps. I have checked International preferences and English is at the top but does not give an option to categorise to a region i.e. UK English

System preferences - > International -> Languages.

Then choose 'edit list' and scroll until you see British English.
