Some sources are direct DVD copy (video_ts folder with contents etc.), some are ISO files.

Is there anything that can mount these as a "virtual DVD" so I can run Handbrake and convert to avi?

You can just point Handbrake to the VIDEO_TS folder or iso image.

Hmmm. I tried that and it picked up nothing from its scan of the directory. But DVD Player and VLC both play it fine, so the image is probably OK?

Toast should be able to do something with it. Make a video DVD image then try and rip that. Or just burn the DVD then rip it again.

mkisofs -dvd-video -o "DVD.ISO" /path/to/DVD/VIDEO_TS

will create a burnable image of your DVD called "DVD.ISO". You can mount this image and play it in DVD Player, or burn it as a DVD with Apple's tools.
