There has been extensive discussion of graphics cards for G5s on the Aperture Forums at Apple - Support - Discussions - Aperture Installation, Setup and General Usage. It will take some digging (there are lots of threads) but you can find good card suggestions there.

However you have not discussed your setup in detail. First IMO you should just try it as is. Also note that if all you are doing is running 2 displays (no apps demand for strong GPU) you may get by with a second very cheap stock card like a 6600 that someone no longer needs (e.g. if they bought a strong card upgrade to run Aperture).
