Does anyone know of a way to take the hard drive out of this and hook it to a PC in order to retrieve data?

It's actually very easy, I've done it several times with various G3's, to replace the HD.

I'll try and find a how-to link.

The hard drive is fine the G3 itself is what's dead. I want to get the data off of the hard drive that's in it.

Yeh I know that, you go halfway, ie take out the old Hard Drive, but don't replace it !!!

OK, I got you. Getting the old one out isn't the problem. The question is can I hook it up to a PC and retrieve the data off of it?

Well you can access it, but whether or not the PC can read it is another matter !!

You may be able to read some files, but longer filenames, and names containing characters PC's can't read may cause problems.

If the hard drive is ok, then you can use something like MacDrive to read mac disks (HFS+) in PCs. If the filesystem is damaged, then best to put it in a Mac (or firewire case plugged to a Mac) and use a data recovery program. If the drive is bad (eg clicking, grinding, not spinning up), then think carefully about how much the data is worth to you. If it is importnat and you are willing to pay up to $2000 or so, then it is best not to do anything to the drive and contact a data recovery service. Otherwise, stick it in a Mac and try your luck.
