I was wondering if anyone has tried using 1Gb DIMMs in the eMac.

I currently have a 1.25Ghz G4 eMac w/ 1Gb RAM and I think my system would run smoother with 1.5 or 2Gb of memory.

I know that some eMacs, I'm fairly sure yours included, can unofficially take 2 GB.

The 1.42GHz eMac can definitely support 2GB of RAM in a two 1GB DIMM configuration. However, the EveryMac page for the 1.2GHz model doesn't say if it supports 2GB.

However, a swift googling has turned up a page that states the eMac can, indeed, support 2GB of RAM. My suggestion would be go for a single 1GB DIMM, and--if that works--upgrade the second one after that. I've found eBay quite a good source of reasonably priced older RAM.
