Hi

I am going to be purchasing an iMac pretty soon and wondered if I could use it as a monitor for my exisiting gaming PC?

I realise that bootcamp would enable me to run XP, but I have a decent PC rig already (better graphics then the iMac has onboard) and do not really want 2 monitors on my desk. Is this possible somehow?

NO. There is no video input port on an iMac. The monitor/display is ONLY connected internally. You cannot use ANY computer's built-in display as a monitor for any other computer. There are ways to mirror another computer's display, but not to use a built-in display as an external monitor for another computer.
