I have a friend who has a spare Core Duo (not Core 2 Duo) for his Mini. If I put the 1.6 Core Duo would I see a big difference over the Core Solo 1.5 I have in there now?

Well you're essentially getting a second processor, so I would think yes.
How much RAM do you have?

It'd be a lot smoother multitasking for sure. Browsing the web, you wouldn't notice. Leopard would probably run much smoother though.

Wouldn't hurt, but I think you'd see a speed boost especially when running multiple apps.
