Hard to decide- Mac Mini Server version has no Mulri Drive but faster processor + Raid capable HDD's + 2GB more RAM; bringing base model to same spec (not 2 drives, obviously!) costs more than server version. Any opinions/advice, please?

We can't really offer you advice if we don't know what you will use the machine for and what your needs are.

It will work, Apple says so here - Apple - Mac mini with Snow Leopard Server
