I would have posted this on Apple's site but I couldn't find a good place to put it; I'm not sure this is the right place either so if anyone could refer me somewhere, that'd be helpful too. What I'm wondering is if I can walk into a Apple Retail store and buy a laptop (15" 1ghz TiBook with 1gb ram and combo drive instead of superdrive) and still get the education price, or can I only do that by ordering online? I can understand that it'd be harder in this case because what I'm looking for isn't a standard model, but is it even possible?

Absolutely; as long as you have your Student ID or some proof that you're a student, then Apple EDU prices are eligible to you in any Apple Retail Store.

You can absolutely get the education pricing at the retail store - in fact, that's what I did on Friday. I got the 15" 867 though.

Getting the 1 GHz with a combo drive might be more difficult - is that just a BTO option or is it a standard (but alternative) config?

The 1Ghz w/ a ComboDrive is a BTO-option only; you won't walk into a retail Apple store & find that config. So, even if you visit a retail store, you'll get the EDU discount, however they'll just hafta place a BTO order for you so you'll still have to wait for it to arrive.

Granted, Apple's official policy says otherwise, but if I were to stroll in with a high school student ID, would said discount work?

High school is completely different; when I said "Student ID" I mean "College". There *are* high school discounts, however I'm not positive they'd be accepted in retail stores whereas I know college ID's are accepted at retail stores to give student EDU discounts.

certain high schools have deals with apple, so it really depends on your school

I'm going on UK on september for my master. I visited apples site for education discount and I found the discount pretty awful... 120pounds for a 2800pounds machine????? (I'm aiming for the 1GHz powerbook)
I always reading about massive education discounts but if I'm going to pay 2800pounds 120pounds isn't much big a deal...
Am I looking on the wrong place or something??

There is a special, Higher Education page with slightly bigger discounts (about 15%) - but you can only access it from the University's network.

Check when you get to the UK.

The Education Discount is typically bigger just before the fall semester begins (such as now) and also, dealing with your campus computer store rather than Apple's EDU Website yeilds lower prices.

You can also phone up and quote your Uni to access the HE deals...

I just bought an 867 15" Powerbook for a little over £1300 this way. Although, they didn't even check I was at Uni or ask for any evidence!

This has been true in the past of some campus's offering better deals for individuals than directly from Apple, but I wouldn't expect to see this anymore. Apple dropped the pricing for individual purchasers to the same level of institutional pricing, which is the price resellers buy them at. I could go into how this is completely screwing the profits of resellers, but thats a whole different topic.
