Probably no one has done this but lets speculate on how well a G4 iBook will work with a external FW DVD burner. iDVD is out but I see LaCie is bundling Toast Titanium 6 with their DVD burners.

Any speculation on how well a iBook G4 800 will work with an external DVD burner?

Well, my 12 inch Powerbook did not show any problems in combination with Toast Titanium and Pioneer DVR-105 Dvd-Writer build into an external firerwire-enclosure. So i guess it will work fine.

I'm just wondering if the performance of burning a DVD is acceptable now that there is a G4 in the iBooks. I've read that DVD burning on the G3 iBooks was unacceptably slow.

While it won't be as fast as on a 12" PowerBook (only half the L2 cache and slower bus) having a G4/800 should do the trick. Keep in mind the slowest system Apple has put a SuperDrive into had a G4/733 processor.
