First, companies typically overstate battery life. They generally test how long is lasts just sitting there doing little/nothing, not real-world usage.
Second, many things (frequent hard drive usage, processor-intensive tasks, networking, etc) can reduce battery life. The more you do, the short the battery will last.

It's 'up to 6 hours' not '6 hours of real-world battery life.'

A new battery will realistically get you three to four hours, depending on usage and model.

As the battery gets older, it will eventually dwindle down to nothing.

My iBook averages about 4-4.5 hours of battery life, 5 on a very good day (doing nothing, mostly). I regularly surf, chat, email, and program.

Also, using peripherals can drain the battery, too, like Airport. Prior to having Airport Extreme, I could get 4.5-5 hours on average. With both the mouse and external USB hard drive plugged in, I only get about 3.5 hours of use.
