I would like to re-install iChat and iDVD for my ibook g4 1ghz.

When I insert the dvd installation disk I go through the neccessary steps until it presents me with the installations types.

Problem is I don't want to install the whole OS since I'm afraid I might need to download the security updates again and God know what else.

Its there an easier way to intalling the two programs mentioned by simply selecting them?

Yes, download an application called "Pacifist" from VersionTracker here:

It should have "how to" documentation included, but basically, it does just what you asked for: selective installation of programs/packages from system installation disks.
