will the ibook output display to another monitor while the ibook is closed?

Quick answer: no.

Long answer: yes, on all G4 iBooks and the last few G3 iBooks, if you run a little program called Screen Spanning Doctor.

However it isn't recommended as the iBook vents a lot of its heat out of the keyboard. If you are considering it I recommend you get some form of laptop stand so there is better air circulation under the ibook.
