I'm just curious- is is possible to run dual monitors and also have TV-out enabled at the same time?

Will you get nothing, or 3 displays? Maybe two displays with a video mirror on the TV screen...

Sure you can....if you have a Powermac. Powerbooks could get one external screen going at any one time, so you could have your PB screen and TV or PB screen and external monitor, but not both.
NOW YOU SEE ME! 2.4 MBP and 2.0 MBP (running ubuntu)

As described in the user's manual, the DVI port and S-Video port cannot be used simultaneously.
