Is a 512 MB 2700 RAM stick from my rev C PowerBook going to fit in my wife's new iBook (which needs 2100 RAM)? I desperately need more RAM, but don't want to waste a 512 MB RAM stick...

Yes if it's an iBook G4 (I guess it is if it's new ). No if it's a G3.
