Right now I have a 60GB hard drive on my 12" PB and I was wondering if it was possible to replace the internal drive to a 80GB one. I know this sounds n00bish, but I am a n00b to laptops, at least.

It's possible, see here for detailed instructions. It's very fiddly, make sure you're grounded (static charge may damage your computer), make sure you have plenty of free space on your desk to arrange everything you remove from your computer neatly (especially the screws).

If the instructions seem too complicated or difficult, you may prefer to have the drive installed by a service technician or a neighbourhood geek.

You should also check out the drive compatibility database at xlr8yourmac.com to find a drive that's working in the 12" PB.

Make sure you check the specs of the new drive carefully. The 60GB drive of the 12 inch Powerbook is a very fast Hitachi with a high data density. Because of this it is faster than the normal 4200 rpm drives. I replaced mine with a Hitach 7k60 (7200 rpm) and was disappointed about the not noticible speed gain.

So find a drive with a high density and high rpm or you might lose performance.
