I noticed Apple Store build-to-order only offers 5400 drive upgrades, for both iBook and PB.

I dont want to switch it myself, and was wondering if anyone sells new, warranted iBooks with this upgrade.

Too fast and hot for current cases/fans maybe?

According to barefeats.com, the 7200 rpm drive writes faster than the 5400, while the 5400 is faster at reading. My belief is that on a standard X install, the drive is doing more reading than writing so the benifits are moot.

Where do you see 5400 drives for iBooks? That drive speed is for PB only. All the BTO drives for the iBook are 4200, according to the site.

Right you are. Just saw the 4200 spec.
http://www.apple.com/ibook/specs.html

Begs another question--would then any Apple Store BTO drive upgrades be 5400 rpm?
Maybe the 80 or 100?

Obviously not, since all of the drive options in the BTO section of the very page you linked to are listed as 4200rpm.

When you click on the learn more link next to the hard drive options for the iBook it says this...

Hard Drive

Depending on iBook model, choose a 40GB, 60GB, 80GB or 100GB Ultra ATA/100 (Advanced Technology Attachment) drive for expanded storage. All drives run at 4200 revolutions per minute.
