Hold Option while clicking on Displays in your System Preferences.
If I remember correctly you have to close System Preferences and open it again to be able to do it again, to change it back.

You can only rotate external displays. Can't rotate the built-in LCD.

Yes you can if it is an ATi Radeon card installed. I can do it on my PowerBook, but it is just too difficult to use the trackpad when the display is rotated. FWIW, the easiest way to do this is to install the ATi Displays software, then you don't have to fiddle with System Preferences and pressing option keys.

MacUpdate page for the ATi Displays driver/software. I don't know if your model is supported yet. This is what it looks like if you use it:

N.B. if your card is supported, you may be able to use it for your issue in the separate thread you posted of forcing FSAA on 3D models in Maya etc.
Edit: My apologies - it doesn't look as though any of the later model Radeons are supported yet (no Intel Macs are listed in the requirements) so it seems you are out of luck for the moment. The drivers were last updated in December 2005, so I guess that this is not surprising!

Is there any command line I can use to force FSAA ? Otherwise I don't get to use my big bad Pixel shader 3.0 tech at all ever... I don't play games much and hell there really are no games that support this pixel shader 3 here... I really want to tinker with it.... PC's got so much cool 3d tools

I'm not aware of any, but I haven't needed to look. I suspect you will just have to wait for ATi to update their Displays driver/software for the Intel macs. You might try searching MacOSXHints.com to see if anyone has posted a how-to yet.
