will MacBook and MacBookPro recognize and write to an external firewire pioneer 111? dual layer?

Most likely. Depends on the FW enclosure chipset, but the vast majority are supported.

I use an Intel Mini with an external Pioneer 110 Dual layer with the cheapest firewire encloser i could find and it works perfect.
