help with 2x external drives on the MBP

i want to get 2x of these
500GB NewerTech miniStack v2 7200RPM HD +... (MS2F7500G16) at OWC
im putting my apps on my MBP 2.33 C2D 15" and i want to be able to save files to one of the external drives and have the second one mirror the first(for instant backup).

So its portable files(i can grab a drive and plug it into another Comp) and safe from loss (HDD failure.)

first off, can i do it? Second how good are these drives(have any of yall used em?) and last do they mean i can plug in a camera or set of speakers and mouse and all that into the drive and use em off of it?

You might want to consider a mirror RAID solution like this one

so it does it atomaticly? when i save to the drive it will save it to each drive?
