Is there any difference to buying online to buying in store?
If I buy online but the computer turns out to be a dud, can I go into an apple store and exchange it?

Yes and yes. Primary differences are that you can get any configuration you want when you order online, but the Apple Store will probably only stock the basic configurations and if you want upgrades they'll cost a LOT. But if something is wrong with what you ordered online, you definitely can take it to an Apple Store for service or replacement.

you cannot return custom ordered laptops. I bought a mbp in store, and bought a 1gig stick of ram off newegg, took me like 1minute to install. And I saved money!

a side question from the last post then...do I void the warranty if I put extra RAM in myself?

No, you do not void the warranty by putting ram in. I checked this out before I upgraded the ram in my CD MPB a few months ago.
