Hi, I have a MacBook Pro 15" 2.16 GHz Core 2 Duo model and was wondering how much Memory it supports. The Apple website is a bit confusing to me about it.

Yes, 3GB is the max. While the machine can physically accommodate 2 x 2GB modules, issues with overlapping address space caused Apple to cap the amount of memory recognized by the firmware at 3GB.

What MF said above. I have 3 GB in my 17" C2D MBP and it works fine. I added a 2 GB DIMM from OWC and put the removed DIMM in another MBP. My guess is the next round of MBPs will be able to address all 4 GB.

Yes, as soon as the MBP gets the Santa Rosa chipset it should be no problem to install 4GB and actually be able to use all of it.
