As ghporter noted, that number is dynamic. It changes based on the power usage you're currently using. In other words, if your screen is on full-bright with airport on and a few open apps, your projected batterylife will be less then if your screen is mostly-dim, w/ no airport, and only Pages or Word open. It's not meant as a specific indication of the time you have left - since power usage can vary widely (i.e. you might get 3 hours w/ normal usage, but 45 minutes encoding video, etc.) that would be impossible to measure. Your percentage indicator is a far more accurate gauge of how much battery you actually have left.
