I just purchased a refurb MBP from Apple

15.4-inch widescreen display
2.4GHz Intel Core 2 Duo
2GB memory
200GB hard drive
8x SuperDrive (DVD±R DL/DVD±RW/CD-RW)
NVIDIA GeForce 8600M GT with 256MB of GDDR3 memory
Built-in iSight Camera

I was wondering if this RAM will work with this particular machine. From what I see, everything checks out ok, but I want to assure myself before buying.

Also, is there a better spec'd RAM kit I should be going after? The last time I've had to deal with RAM was well over 2yrs ago. Thanks in advance with any insight.

Yes it should work. Apple doesn't take advantage of more aggressive timings, so there's no point in buying "overclocker" RAM with crazy prices and LEDs.
