I'm looking to buy a Macbook or a Macbook Pro. I'm on a bit of a budget, so am leaning towards a Macbook. I need it to run Photoshop. I currently have CS2, although I think I can get hold of CS3. My question is, will Photoshop run ok on a Macbook?

It will run ok on a MacBook. PS doesn't make good use of the GPU so the main difference in your case will be screen size. I'd imagine with an app like PS the bigger the screen the better. OTOH a 13" MB with an external $200 24" display might be the better PS station than a 15" MBP with no external screen. Do you need to use PS on the road or at the desk only?

CS2 and CS3 don't officially support Snow Leopard, so you'd need to get ahold of CS4. But yes, it'll run pretty well on even the base MacBook.

I run CS3 on a Macbook 2.16GHz running OS X 10.5, and its fine.
