With exception to the last question, yes, it is really that easy.
Applications that are registered usually recognize when you change machines and require you to re-enter the serial number. So I would recommend you look for the box Office 2007 came in and enter the serial number again.

You have to be able to operate the old mac to use migration assistant. I can't get the screen to stay on long enough to complete what I need to do. Is there a way around that?

Connect the iBook to the iMac with a FireWire cable. Boot the iBook in target disk mode and transfer your files from the hard drive.

Firewire Target Disk Mode is entered by holding the T key at startup on the Mac you want serving as an external disk.
