Sometimes, my new i7 MBP is an insomniac: it won't stay asleep with the lid open (not a problem) or closed (bad; sometimes cycles between wake and sleep). Where can I check to see what is waking my machine back up? I'm guessing it's in Console somewhere.

You could search in console (all messages) for "wake" or "wake reason".

I seem to get a lot of these when it happens (replaced part of the MAC addresses with x's):

Jul 17 09:56:58 Unibody-MBP mDNSResponder[32]: SendResponses: How did we fail to have space for the OPT record (0/1/0/0) 24 . OPT Max 1440 Vers 0 Seq 57 MAC C4:2C:03:08:xx:xx I-MAC 00:50:56:C0:xx:xx

which points to Bonjour for some reason.

Hmm.

Do you have anything magnetic passing near the lid sensor?

No. Rebooting the machine seems to have fixed it for now, but sometimes (like this time) when I reboot, I get stuck at a solid gray screen. Resetting PRAM fixes it, but I'm not sure what's going on or if that's related to the sleep issue. And it doesn't happen all the time.

Do you have "Wake for network access" enabled in Energy Saver? If so, your computer will periodically wake itself. Mac OS X v10.6: About Wake on Demand

I did have that turned on (before and after rebooting and fixing the problem), but there's nothing on my network that could be accessing my machine. Would a message in the console indicate this as the cause of waking back up?

The computer will wake without anything trying to access it to be sure it's still available on the network. From the article I linked:
Macs that have Wake on Demand enabled will occasionally wake for a brief time, without lighting the screen, in order to maintain registrations with the Bonjour Sleep Proxy. On some Macs, sounds from the optical drive, hard drive, or fans may be heard during these brief maintenance wakes.

The console should list Wake reasons more obviously than that. You are literally looking for a line that contains "Reason for Wake". Just type "Wake" into the filter. If its the magnetic switch, it should list "lid0"or similar as the reason.

It may have been a USB device. The "how did we fail" messages are already gone from the log.
